Wednesday Recipes--Easy Peesy Chicken Salad with Spiced Pecans--An Original Recipe

Dear Readers, those of you who know me are well aware that I love following recipes. Sometimes, however, even I get a little creative once in a while. This is my go-to grilled chicken salad recipe and is so easy that it probably doesn't even count as a recipe, but, hey, isn't that what we all need on busy days?


Grilled Chicken Recipe


Ingredients:


1 lb. Chicken breasts (sliced into medium-sized strips so they'll grill more evenly)

Your favorite mayonnaise-based salad dressing, such as ranch or blue cheese





Directions:


  1. Early in the day, at least a few hours ahead of meal time, best in the morning before you leave for work--marinate the chicken in the salad dressing by placing the chicken in a gallon plastic bag, covering with dressing (amount needed depends on how many chicken breasts), and kneading the chicken to spread the dressing. Place in refrigerator until time to cook.

  2. Grill the chicken. In the winter, I use a Foreman grill--cooking takes about fifteen minutes, flipping the pieces of chicken halfway through. I also slice a piece to make sure the meat is cooked all the way through and sometimes cut all the way and grill the exposed pieces.

  3. Delicious!


Salad ingredients can include: Spring mix, sliced mushrooms, bell pepper, roasted and sliced beets, broccoli florets, cauliflower, sliced red onion, olives, sliced sundried tomatoes, and boiled eggs---plus, any other vegetable you can think of!


Spiced Pecans:


Ingredients:


1/2 cup pecan halves/pieces

1-2 tablespoons brown sugar

Dash or two of red pepper flakes, depending on desired heat level


Directions:


  1. Combine all ingredients in a small non-stick skillet.

  2. Heat on low, stirring frequently.

  3. When sugar melts, remove from heat.


    Enjoy on top of salad or as a snack!


    Who said healthy couldn't be delicious and easy!!
