Wednesday Recipes...My SuperBowl Chili

(Ssssh...A little late). Readers, I know I'm a little late with this one, but when I thought about comfort food, this recipe jumps to the top of my mind. We love this recipe and have made it for parties and chili cook-offs and, of course, the Super Bowl.


My recipe has my own secret ingredient--apple cider vinegar. Do you have a favorite chili recipe? Share below!

Chili


Ingredients:


1 pound ground beef

1 cup chopped onion

1 cup chopped green pepper

2 cloves garlic, minced

2 cans tomato rice soup (which can be hard to find, so substitute regular tomato soup if needed)

1 can (15 ounces) kidney beans, not drained

2 tablespoons chili powder (vary according to how much heat you desire)

1 tablespoon apple cider vinegar

Accompaniments (shredded cheddar cheese, sour cream)

Large scoopable corn chips, tortilla chips, or cornbread


Directions:


  1. In large pot, cook meat, onion, green pepper, and garlic until meat is browned and vegetables are tender, stirring occasionally to break up meat. Drain and rinse pot.

  2. Stir in soup, beans, and liquid, chili powder, and vinegar. Heat to boiling. Reduce heat to low, simmer, uncovered 30 minutes, stirring occasionally.

  3. Ladle into bowls, top with cheese and sour cream. Makes about 6 servings.
