Kieran and I met when we were both members of our local Romance Writers of America chapter, LRWA (the L stands for LowCountry), here in South Carolina. My daughter was in elementary school at the time and now she's 27! Since then, Kieran has switched to women's fiction and I've switched to Christian fiction, but we have somehow managed to maintain our friendship as we go in different directions.
Kieran told me about this recipe last Christmas when we went to tea at a downtown Charleston restaurant and I tried their version. This is a truly delightful dish--I prefer mine on croissant, but lettuce is healthier!
Curried Chicken Salad
Mix:
3 cups cooked, chopped chicken breast
2 TBS chopped onion
1 cup green grapes, halved
½ cup sliced almonds
2 tsp curry powder
Mayonnaise (enough to coat well)
2 TBS soy sauce
2 TBS lemon juice
Serve on lettuce bed. Serves four.
